We might be biased, but doesn't this Vegan Chocolate Chunk Cookie Tiramisu look (almost) too pretty to eat? 😍
3 tablespoons cornstarch
¼ teaspoon fine sea salt
2 cups unsweetened beverage-style coconut milk
¼ cup agave syrup
2 teaspoons vanilla
½ cup brewed coffee
½ teaspoon orange extract
1 package Julia’s TableⓇ Chocolate Chunk Cookies, coarsely crumbled
Cocoa powder, for dusting
In a medium saucepan whisk to combine cornstarch and salt. Gradually whisk in coconut milk and agave syrup. Cook over medium heat, whisking constantly, until mixture comes to a simmer and thickens visibly. Take off the heat and whisk in vanilla. Transfer to a bowl and place a piece of plastic wrap directly on the surface of the pudding. Cool completely, then chill.
In a medium bowl stir to combine coffee and orange extract.
Place a layer of crumbled cookies in the bottom of each of 4 small glasses, cups, or jars. Sprinkle or brush cookies with about 1 tablespoon coffee mixture. Top with big spoonfuls of pudding mixture, then a second layer of cookies and coffee mixture. Top with a second layer of pudding, smoothing the top.
Sift cocoa powder over the glasses or jars and serve immediately.
