Dark Chocolate-Stuffed Waffles With Sweet Mango Chutney

Ingredients
For the Chocolate Filling:
½ cup heavy cream or canned full-fat coconut milk
6oz dark chocolate (60-70%), chopped
Finely grated zest of 2 limes
¼ teaspoon fine sea salt
For the Chutney:
1 ripe mango, peeled, pitted, and diced
Finely grated zest of 1 lime
3 tablespoons fresh lime juice
¼ cup packed fresh mint leaves
For the Waffles:
8 slices Julia’s TableⓇ Soft White Bread
4 tablespoons butter or vegan butter, softened
Directions:
In a small saucepan bring cream or coconut milk just to a boil. Take off heat and stir in chocolate until silky smooth. Stir in lime zest and salt. Set aside.
In a medium bowl stir to combine mango, lime zest and juice, and mint. Set aside.
Spread one side of each slice of bread with butter. On the non-buttered side of half of the bread slices, spread 1 heaping tablespoon chocolate. Top with a second slice of bread, buttered side out. You should have 4 chocolate “sandwiches” with the buttered side of both slices facing out.
Preheat a waffle iron. Cook one “sandwich” at a time until browned and gooey.
Serve warm with mango chutney.
