2 tablespoons flax seeds
1 cup pumpkins seeds
1 cup sunflower seeds
1 cup dried cranberries
1 package Julia’s TableⓇ Oatmeal Cranberry Cookies, crumbled into bite sized pieces
½ cup hemp seeds
2 tablespoons maple syrup
1 tablespoon olive oil
1 teaspoon vanilla
¼ teaspoon fine sea salt
Preheat oven to 325℉. Line a large sheet pan with parchment paper.
In a small bowl, mix together the flax seeds with 6 tablespoons water. Let sit 15 minutes to thicken.
In a large bowl, stir to combine pumpkin seeds, sunflower seeds, cranberries, cookies, hemp seeds, maple syrup, olive oil, vanilla, salt, and flax seed mixture. Spread out on prepared sheet pan.
Bake 25-30 minutes, stirring halfway through baking. Let cool completely, then break snack mix into bite size pieces.
