Buffalo Cauliflower Quesadillas

Ingredients:
For the Cauliflower:
1 large head cauliflower, trimmed and cut into bite-sized florets
2 tablespoons preferred vegetable oil
½ teaspoon fine sea salt
½ cup Buffalo-style hot sauce
For the Blue Cheese Dressing:
½ cup crumbled blue cheese
¾ cup plain Greek yogurt
¼ cup buttermilk or plain kefir
1 tablespoon lime juice
½ teaspoon garlic powder
½ teaspoon fine sea salt
¼ teaspoon black pepper
For the Quesadillas:

1¼ cups shredded mozzarella (5oz)
1½ tablespoons preferred vegetable oil
Celery sticks, for serving
Directions:
Preheat oven to 425℉. Line a large sheet pan with parchment paper.
On the sheet pan toss together cauliflower, oil, and salt. Roast until tender and browned, 20-25 minutes. Drizzle the Buffalo sauce over the cauliflower and toss to coat.
In a medium bowl whisk to combine blue cheese, yogurt, buttermilk or kefir, lime juice, garlic powder, salt, and pepper. Set aside.
Lay the wraps on a countertop and divide cauliflower and mozzarella among them, leaving half of each wrap bare. Fold the bare part of the wrap over to enclose the filling.
In a large nonstick skillet heat 1½ teaspoons of the oil over medium heat, swirling the pan to coat it with the oil. Place 2 of the quesadillas in the skillet and let cook until browned on the bottom, then flip to brown the second side.
Repeat with the remaining oil and quesadillas.
Cut each quesadilla in half into 2 wedges, and serve with blue cheese dressing and celery sticks.
Kids In the Kitchen!
Get the kids involved in building the tortillas--have them top the wraps with cauliflower and cheese. If your kids don’t love blue cheese, you can leave it out of the dressing altogether or divide the dressing in half, reserving the plain creamy dressing for the kids and stirring some blue cheese into the dressing for the adults.
